Ingredients:
1 lb fish fillet* 500 g
2 cups Lettuce, shredded 500 ml
1/4 cup Green onion, finely chopped 50 ml
1 cup Celery, thinly sliced 250 ml
1 cup Carrot, coarsley grated 250 ml
1 cup Frozen peas 250 ml
1/2 cup Grated mozzarella cheese 250 ml
2/3 cup Natural yogurt 150 ml
1/2 cup Mayonnaise 125 ml
1 tbsp Lemon juice 15 ml
2 tsp Honey 10 ml
1 tbsp Chives, finely chopped 15 ml
1/4 tsp Dill weed 1 ml
2 tbsp Bacon bits 25 ml
1 small Clove garlic crushed
1/4 cup Parmesan cheese 50 ml
Directions:
Place fish fillet on baking rack or microwave safe dish. Cover with paper towel, then tightly wrap with plastic wrap, microwave on high for 5-7 minutes.
Fish may also be poached by placing it in a boiling water. Return to boil, then simmer for 5-7 minutes. Cool fish before placing in salad.
In a glass bowl, layer lettuce, onion, celery, carrot, peas, fish fillet, and cheese. Refrigerate for several hours. Combine remaining ingredients and serve with salad.
